Astrolabe Vendanges Tardives 2012 - Gaillac
Lapérouse was a famous admiral, fascinated about the discovery of new territories. He sailed the seas and oceans on a ship dubbed “Astrolabe”.
Passionate about the discovery of new sensorial territories, Les Vignerons d’Ovalie have established a research and development program, dedicated to the study of historic grapes varieties, found only on the land of its growers. The result of this research led in turn to the creation of the “Astrolabe” brand in homage to this legendary navigator.
TERROIR : Clayey-calcareous slopes on the right bank of the river Tarn and graves on the left bank.
VITICULTURE :Sorting of berries and manual harvesting.
VINIFICATION :Fractioned pressing is used to obtain the best juice. Cold settling. Fermentation at a low temperature (15°C). Refrigeration and filtration techniques are used to stop fermentation. It is matured in wooden casks for a couple of months to obtain the desired degree of harmony between the wine and the oak container.

Extremely harmonious palate, between smoothness and liveliness, long suave and vibrant persistence.
FOOD PAIRING : auteed foie gras with grapes, exotic cuisine or mild curry, any sort of yellow fruit dessert (tarts, sorbets…).

It is the leading supplier of red and rosé wines from the Southwest of France.
