VINIFICATION : Destemmed, 20–day vatting period, release and daily pumping over. Temperature between 28°C and 30°C. Maturing 10 to 12 months in vats.

Intense and fragrant aromas, displaying strawberry jam, licorice menthol, cocoa and mild spices of vanilla-cinnamon-nutmeg and grey pepper.
Ample and spicy on the palate, good balance between the tannins and acidity, nice lengthy peppery-vanilla aromas, plenty of finesse.
FOOD PAIRING : beef and carrot stew, shepherd’s pie, Indian or Creole cuisine, saint-nectaire cheese.
