Estandon Zenith 2016 – Côtes de Provence

  • TERROIR : On the Cotignac hills (clayey-calcareous soil) and Flayosc (sandstone soil), in « green » Provence and at the Verdon gate. Most vines over 20-year-old.
  • GRAPE VARIETY : Grenache, Cinsault, Rolle
  • VITICULTURE : Mainly mechanical harvesting, very early morning in order to obtain this very pale colour.
  • VINIFICATION : Short skin maceration before pressing. Juice settling at low temperature. Thermoregulated fermentation and malolactic fermentation blocked. Traditional vinification in stainless tanks under temperature control.
  • TASTING NOTES : Pale pink color with silver tints, evoking litchi. Refined, elegant and well-balanced aromas, made up of white fruit and underscored by floral notes.
    Silky attack, with delicate tannins. The length of the palate is extended by hints of peach, scattered with peppery notes.
  • FOOD PAIRING : well suited to a refined dish such as sea scallop casserole./li>
